WHAT IS MANNA-K KOMBUCHA?

Manna-K is an organic certified kombucha ingredient that has already been traditionally fully fermented for up to 6 months. During the long fermentation the kombucha becomes super strong in kombucha organic acids and extremely low on sugar and alcohol. It is used by over 100+ kombucha companies around the world to blend their perfect product. We have already done the fermentation so they don't have to, and its available today.

HOW CAN I USE MANNA-K?

You can use Manna-K to blend with other ingredients like sugar, tea, juices & extracts to instantly create really delicious kombucha recipes. It is designed to be the perfect base for you to build flavour on top of. WHAT PROBLEMS DOES MANNA-K SOLVE?

The most common issues kombucha brewers experience as they try to scale up their breweries are: short self-life, exploding bottles, excessively high alcohol, rotten flavour and aroma, lack of technical expertise, trying to keep production up with growing sales, trying to get the most out of their production space without the need for additional capital investment. IS MANNA-K LIVE?

Yes, most of the Manna-K we sell is living raw kombucha, it still contains living kombucha bacteria and yeast. We also sell a pasteurised version of Manna-K if this is what you prefer for your production facility.

WHAT INGREDIENTS IS MANNA-K MADE WITH?

Manna-K is naturally fermented using Organic Sencha Green Tea, Organic Cane Sugar, Filtered Water & an Organic kombucha SCOBY (symbiotic culture of bacteria and yeast).

HOW DO I DECLARE MANNA-K ON MY LABEL?

Nearly all our customers declare it on their ingredients as "Kombucha Culture". You do not need to name it as Manna-K.

IS MANNA-K ORGANIC OR BIO CERTIFIED?

Yes, Manna-K is Certified Organic

WHAT OTHER CERTIFICATIONS DOES MANNA-K HAVE?

Manna-K is produced in a SQF certified facility, HALAL Certified, Kosher Certified.

IS MANNA-K A CONCENTRATE?

No, nothing has been done to artificially make Manna-K more concentrated. Because of Manna-K’s naturally long fermentation period it becomes about 20 times stronger in organic kombucha acids than a normal kombucha drink you might buy in the supermarket.

CAN MANNA-K BE USED AS A STARTER TO BREW MORE KOMBUCHA?

No, this is not what Manna-K has been designed to do. Manna-K is a ready to blend Kombucha Ingredient. To brew fresh kombucha we recommend you source a fresh kombucha starter + scoby from a local supplier, the best starters are super lively, about 1-6 weeks old and between 3pH and 4pH.

HOW MUCH ALCOHOL IS IN MANNA-K?

We guarantee Manna-K will always contain less <0.5% data-preserve-html-node="true" ABV before you blend it. When blended at a rate of 5% your finished kombucha drink should have as low as 0.025% ABV, this is only a trace amount of alcohol and suitable as an alcohol-free product. Please check your local labelling regulations.

WHAT BACTERIA & YEAST ARE IN MANNA-K?

Manna-K is naturally fermented for up to 6 months using a kombucha SCOBY (symbiotic culture of bacteria and yeast). When SCOBY has been genetically tested, it has shown to contain a range known species of yeast and bacteria that are involved in the fermentation of kombucha.

Due to the long fermentation period of Manna-K, the range of active species can change a lot over time due to factors like changing pH & availability of nutrients. While Manna-K is a raw unpasteurised kombucha for the reason described above, we do not make any claims or guarantee the viability of bacteria & yeast in the finished product that we ship out to you.

WHAT IS THE SHELF LIFE OF MANNA-K?

Because Manna-K has a super low pH and no fermentable sugars left we guarantee it is ambient stable for up to 4 years from its manufacturing date. Nice!

Yes, many of our customers produce in 3rd party bottling factories around the world. We have built up a broad network of kombucha co-packing partners, reach out to us and we would be happy to make introductions.

We always hold 3 months of reserve stock in every warehouse to make sure we always have what you need when you need it. We ship parcels (2.5L & 20L) with FedEx & 1000L IBCs go through our logistics partners’ network.

  • 2.5 x Litre Jerry Can - Perfect for benchtop test & development - can make up to 50 Litres of finished Kombucha.
  • 20 x Litre Bag in Box - Perfect for Test, Development & small-scale trials. Can make up to 400L of Kombucha. We can also fit multiple bag in boxes on a standard pallet if you require an amount less than 1000 Litres.
  • 1000 Litre IBC - This is the standard size for ongoing production - Can make up to 20,000 Litres of finished kombucha.
